Comments: I was fascinated by all the earlier books by Mrs. Batmanglij but her latest book has a special place in my heart. I cannot do enough to highlight this book's difference from the majority of other cookbooks that are out there. This is not only a flawless book with a vegetarian approach, but its approach is one of great originality: The beautiful recipes are accompanied by even more beautiful pictures and stories of the land and its people. It leaves us with so many great choices to try, designed to fit any situation: Georgian Stuffed Tomatoes for a warm a fall evening, and Sweet and Sour soup for a cold winter night. Unlike many other cookbooks, this book takes us to the world it is borrowing its recipes from: the Silk Road, a world where different culinary cultures are and have been connected to each other, crossing the mountains and deserts of Central Asia to connect East Asia and the Mediterranean. In a way not known to many of us, the Silk Road was an important cultural crossroads and this book celebrates that. Get this book, and you will not only have gotten a great cookbook with recipes of wonderful tasting recipes covering a great part of the world, but you will also be exposed to a beautiful culture - more so a mix of many cultures- that you will be able to see through the beautifully placed stories and pictures.

Summary: My new favorite cookbook
Comments: I've read all 83 (whew!) of the reviews here so far and find it quite interesting that only a handful of them are negative. That so many people clearly love this cookbook only confirms my own impression. I've made dozens of recipes from this book and now trust it so completely that I will make special company dishes without having tested them first - and this is the only cookbook I have that gets that honor. The roasted eggplant lasagna with garlic bechamel is sublime, the carrots braised in honey, butter and fresh thyme is a delicious new twist, the sweets in back will delight your taste buds, and the vegetable section is well organized by ingredient. The recipes range from very simple to more complicated, but no recipe is too intimidating, no matter what your cooking experience. The food in this book has led me more towards becoming a vegetarian than any of the other vegetarian cookbooks I've ever had. No dish I have made from it has turned out bad. I find Madison's approach to cooking refreshing, really allowing the flavors of the foods to take center stage, instead of relying on long ingredient lists, complicated sauce-ery, or other gimmicks to do what the ingredients ought to be able to do alone. Yet none of the dishes sacrifice flavor. I bought this book in paperback three years ago and have used it so much, the spine is cracking badly. Just go ahead and buy it in hardcover - you won't be sorry. I've recommended it to friends who enjoy cooking and cookbooks as much as I do. None of us are vegetarians. But without fail, all of them have come to love this cookbook, and most of them are pretty sophisticated cooks. Unless you are a culinary cynic or have rigid opinions about cooking and food, I don't think you can go wrong with Vegetarian Cooking for Everyone. It's a real winner.

Summary: A life changing event
Comments: Ms. Victoria writes a convincing argument. I am one of those who likes to gather lots of information before committing to a life style change. The author begins with providing one of the best rationale for going on a totally raw food diet vs a cooked food diet. Conceptually, I had an idea of what she was talking about, having read some vegan and fasting books. What made this book immediately garner my attention was a chart she has that shows the percentage-cooked food to raw food consumed vs the percentage of nutrition assimilated. The jump between 99% of your food consumed being raw and 100% of your food being raw is unreal. Read it. Fascinating. In addition the author points out how having a healthy body requires you have less food intake. Her son, a 16-year, goes snowboarding for 12 hours and takes two oranges to eat. And while his friends spend the day constantly eating, the habits the author's son has, allows him to consume more nutrients and perform better. Knowing how teenagers eat-this is an incredible approach. The remainder of the book adopts the AA approach to dealing with an addition of alcohol to the addition of cooked food. Many of us have tried to go raw, but it is hard to stick with, less than exciting to look forward to, and socially tough to deal with day in and day out. The author's 12-step approach seems to understand the pain levels we all go through and together, the 12 steps make the challenge seem more like a winnable fight. Each step makes you do some personal reflecting. Some of the steps include, living in harmony with no raw food folks, dealing with temptation, seeking more knowledge, recognizing you have an addiction, etc. I like the way the author thinks. Her logic doesn't make great leaps, and is easy to follow...rationale but enthusiastic. I wanted to buy her other book and hear more of her stories. Overall, I found the book fascinating, educational and motivation. Reading the book can be a life-changing event.

Comments: True to the title, this book is full of everyday recipes. I'm not as strict a vegetarian as the book advocates, but I do like to eat light and still enjoy food. Many of the recipes in this book are so easy and speedy, I keep coming back to them for quick weeknight dinners. We like the Haystacks and the nonfat hummus, both a 15-minute deal. I also liked his suggestions for roasting vegetables for sauces instead of sauteing. It adds a nice depth of flavor without fat. This is not a complicated cookbook, but it is very tasty. It definitely fits into a busy person's long-range plan for eating healthfully.

Summary: Easy to use and the recipes are awesome
Comments: I bought this book based on a recommendation from my sister and am so glad that I did. First, the book is well laid out. There have been many times when I've looked at the veggies in my fridge and wondered what to do with them. This book is organized by vegetable so I can pop right to the relevant set of pages and quickly whip up a hot meal. Second, the recipes are easy, no fancy spices that you won't find in the US (although I have to admit that I have a huge array of spices). Third, it allows you to use the entire range of vegetables that you get in the US. If you are a vegetarian here, you're options are fairly limited in terms of the veggies you get (compared to Asia). Jaffrey has also cleverly modified recipes so substitutes can be used without any loss in taste.

Summary: This is the best, my copy is falling apart
Comments: I'm a personal Chef. I work part time cooking privately for a Jesuit Community as well as teach Vegetarian Cooking at the New School in NYC. This cookbook, is the wonderful! I literally have to buy a new copy cause mine is falling apart. The recipes are easy, versatile, well written and varied. The suggestions for menus are helpful. And you don't have to be vegetarian to enjoy this book. The fish recipes are excellent and all the dishes can be used with other meals. Summary: Fantastic
Comments: I've had this cook book for about 9 years now and have cooked nearly every recipe in it. It's easy to follow and the recipes are delicious. Each recipe has an estimated preparation and cooking time which is a great way to gauge the intensity of what you're in for before you start. I'd highly recommend this book for beginners as well as more advanced cooks. Katzan explains each step in clear and easy language and also adds hints for where to obtain some of the more exotic ingredients. I've gotten so used to cooking some of the dishes that I've begun experimenting by substituting ingredients and seasonings. This cookbook includes dairy and eggs so it's not for vegans, but if you are ok with dairy and eggs then it's a good source.

Comments: Passionate Vegetarian: More Than 1,000 Robust Recipes With Notes On Cooking, Eating, Loving, And Living Fearlessly is one of those "bible" type of vegetarian cookbooks that contains so much more than recipes that it is almost an invitation to live, or to live more fully. Almost overwhelming in its 1000 plus pages, it is dauntlessly studded with jewel-like recipes within recipes for special sauces, seasonings, condiments and exotic blends. Author/creator Crescent Dragonwagon is the famed Vegetarian chef and owner of the former celebrated Bed and Breakfast establishment Dairy Hollow Inn in Eureka, Missouri. Though it is now a writer's retreat, many remember fondly the days of its other operation which saw the evolution of many of the succulent recipes contained in Passionate Vegetarian. I never was lucky enough to be a guest there, but I had a friend who did with her husband and never stopped raving about the place and the food.

Summary: The Only Cookbook You Need!
Comments: Even though this book already has great reviews, I felt compelled to write and let readers know how amazing this book has been for us - we became vegans last December. Friends say, "your vegan - what do you eat?" Well, I answer - a lot more than I did before I was vegan - thanks to this cookbook's tremendous variety of quick, easy, and always delicious recipes. The authors cover all of the staples and add in a section on raw recipes (rawsome :)). We have not tried a recipe yet that was bad - and we have tried many! A couple of favorites are the polenta with cashew pesto and vegetables and the baked ziti with sietan. All recipes we have tried take less than an hour to make - and most much less! The authors go over equipment, new ingredients, where to buy (including on-line), and the like. They even have a section on animal based ingredients that you may not know about - we have become expert label readers! All in all, this is a great purchase - after about 6 months we have a worn in cookbook, a very diverse spice shelf, and confidence that being vegan is bliss! The best cookbook you will own.
P.S. Many recipes call for a blender - usually in weird ways - that end up making great textures!

Comments: After being referred to as the "Soup Natzi" a la Seinfield, by my family, I can heartily recommend this book to EVERYONE. There is not a recipe in this book that falls flat. Clearly written, easy to follow recipes. And even better: all the recipes are filling, hearty, and very tasty. I have had this book for 3 weeks now, have made a soup just about every day, and have not regretted even one of them. After trying these recipes you'll discover you're a soup lover, even if you hated soup before.

Summary: The simplest Way to be Healthy and Understand Why
Comments: I started out by reading Marilu Henner's first two books which were excellent. The "Total Health Makeover", but she referred to Marilyn Diamond in her book and the "Fit For Life" idea. Choosing to do further research I decided to read "Fit For Life" and have never gone back to the old ways of eating.
This cookbook gives you more than just recipes. This book gives us who want to be healthy (and who aren't the greatest gourmets) easy and simple menus that are easy to understand, but better yet she explains why she does the things she does, and the principles behind the things she does. It makes it a lot easier for people to stick to a plan when they understand what is going on in their body, and what they can do to prevent some of the everyday aches and pains that are caused by improper food consumption. By no means am I a cook, or a fanatic! But this cookbook makes my life easier and makes it easier to comply with the way I should be feeding my body. Thank you to Marilyn Diamond and Harvey Diamond as well as Marilu Henner. I have never said this before, and probably never will again - THIS COOKBOOK COULD CHANGE YOUR LIFE and MAKE IT 100% BETTER! I promise.

Comments: Of all cookbooks on my book shelf, this is my all-time favorite. I have cooked through the recipes in the book nearly four times now. Why do I find it so outstanding? It is well written, well researched, graphically pleasing, the recipes are easy to follow, and the tastes are simply sublime. Further the A To Z reference section answers every imaginable question a cook might have--its like attending a cooking class taught by Yamuna Devi herself! I highly recommend this book. Comments: I almost wish Jack Bishop hadn't put "vegetarian" in the title. I hope the connotation of that word doesn't deter meat eaters from checking out this book. These are fantastic recipes - they just happen to be meatless. I don't think there's a recipe in here that has more than 10 ingredients, and most have less than that. I've tried dozens, and haven't come across a bad one yet. The dessert chapter was a little disappointing, probably because I don't have an ice cream machine, but I have discovered the joys of strawberries with balsamic vinegar! This is the book I reach for whenever I want to make something easy and delicious - which is all of the time, of course!

Summary: A wonderful, informative book!
Comments: I also bought this book shortly before becoming a vegetarian and found it to be a wonderful resource. It goes into a great amount of detail regarding nutrition, dispelling many commonly held beliefs about protein requirements and what is healthy. (No, vegetarians are not starving to death from lack of protein and just too stupid to know it, but they do have a 47% lower risk of heart attack!) This book is very well research and has a huge bibliography section for those wanting to learn more. It details the scientific, social, political, and religious reasons that different vegetarians have for their lifestyle. My only complaint with this book is that the recipes inside are vegan, not vegetarian (no milk, cheese, eggs, etc.) But, vegan or not, they are delicious!

Comments: Being a vegetarian for over ten years I have many cookbooks on the subject and this is definitely one of the best. What a wonderfully well written book, easy to follow and every one of the dishes I have tried have been delicious. This is not only great for veggies but also make wonderful meals for those carnivores in the family. Comments: I bought this book over a year ago when my husband and I started eating healthier. We avoid dairy now and most of the recipes that call for milk specify that soy milk can be substituted. (Recipes that call for cheese I automatically sub soy or rice cheese.) All of the recipes are extremely simple. The ingredients lists are usually very short and the entire book is very practical. If you're learning to cook (or if the idea of heading into a kitchen scares you) this is the book for you.

Here are the sections with some examples of recipes:
Breakfast (french toast, vegan pancakes, scrambled tofu, rice pudding)
Dips and Spreads (salsa-excellent! hummus, guacamole, tahini)
Soups and Stews (miso-happy soup, minestrone, split pea, kale and potato, Moroccan stew)

Summary: Not Just A Soup and Salad Cookbook
Comments: Like to cook? I mean, like discovering new seasonings and playing with interesting ingredients? If so, THIS BOOK IS FOR YOU!
Don't be dismayed that the recipes are all soups and salads. Those are very broad categories! Many "salads" are more like casual meals (such as Bean Puree with Seven Savories, which is pretty much a really cool Middle Eastern-style nachos, using toasted pita wedges instead of tortilla chips, of course). And as for soups... there are SO MANY different recipes here, no matter what your idea of soup may be when you open this book, it'll have expanded ten-fold after you've perused these pages. The best part is, soup and salad are such forgiving mediums, this book is perfect for the home chef who wants to explore. Helpful text explains unusual ingredients and describes why certain vegetables and seasonings were chosen to enhance flavor and texture in each recipe. At the bottom of every recipe, the Moosewood editors were kind to include a half dozen or so dishes that would compliment it nicely. Makes meal-planning a snap, and so far, they've been right on target, every time. I got this book for Christmas and many of the recipes have already become "regulars." I have no qualms about trying new dishes, even when serving guests, because you can trust these recipes to need little, if any, tampering. Though I have several Moosewood cookbooks (and I like them all), I can't recommend THIS book enough. Really! Oh yeah, and I wanted to also mention that Moosewood also includes time estimates and nutritional information for every recipe. gotta love that.

Summary: Great variety of recipes and cuisines
Comments: My first taste of Indian food was from a vegetarian recipe I made at home in the South 20 years ago -- and I was hooked. When I found Madhur Jaffrey's cookbooks, I was in heaven. This cookbook vastly expanded my horizons on Indian food (I had no idea what I was doing until I read her descriptions and instructions). I also learned how to make sushi and other Japanese dishes from this book. I think her selection of rice dishes is amazing. When I finally moved to a place where there were Japanese, Indian and other Asian restaurants, I found the flavors similar to the recipes that Madhur Jaffrey had taught me to love.
If you want to make a wide variety of Asian dishes, this is a great cookbook for you.

Summary: Great cookbook!
Comments: I love this cookbook. I really enjoy roasting vegetables because the flavors become so intensified. I haven't found the recipes to be too complex - they generally have 5-6 steps, and the first one is usually to preheat the oven, the last one is to serve hot or whatever. So I've found it pretty straight forward. The ingredients are a great mix - not your basic salt and pepper but adding things like honey or spices like cumin or cilantro. Really really tasty stuff here. Highly recommended and I'd definitely buy it again!

Summary: Complicated, but worth it
Comments: This, together with Yamuna Devi's "The Art of Indian Vegetarian Cooking," is my favorite cookbook.
As has been mentioned in other reviews here, the recipes are somewhat complicated. I am slowly working my way through the book and have already attempted almost 50 of the recipes. The first few recipes were daunting and I was tempted to give up on the book, but the more recipes I tried, the easier it got. I found that I was learning something. As others have mentioned, I also don't have all day to prepare a meal, and more often than not, I will only cook from this book on weekends, though to be fair, not all of the recipes are as time-consuming as they seem. I highly recommend this book to anyone who also considers cooking a hobby and not just a means to an end.
