Summary: Finally!
Comments: Finally, a gluten-free cookbook with recipes for 2002! I was diagnosed at age 30 with Celiac Disease, and sorely missed my old way of eating. The first Gluten/Wheat free books I purchased seemed to have recipes from the 70's like tuna casserole, etc. (open a can of gluten free mushroom soup and pour it over gluten-free pasta, UGH!) I didn't eat that way before my diagnosis, and certainly didn't want to start. Also, I enjoy entertaining and it is important to me that when I cook for others, no one but me knows that the food is gluten-free.
This cookbook features recipes I can serve my friends and family members with pride. For instance I served the blueberry muffins at a baby shower, and baked them for neighborhood firefighters to rave reviews. The last time I made the cornbread, there were no leftovers because my non-celiac friends all ate second and third helpings.
If you are looking for recipes featuring FRESH seasonal ingredients, then this is the cookbook for you. I can't recommend it enough!

Summary: Smart, Delicious, and Healthy
Comments: Of all the cookbooks I've purchased, this is my absolute favorite. Recipes are EASY and DELICIOUS. The bonus is that you feel great knowing that what you're putting in your body is absolutely healthy. As you read the book you learn that the authors are both exceptionally well-informed and educated; advice is practical.
I recommend this book to everyone and not only people with yeast problems. Since I've turned my friends on to the recipes in this book, they also purchased their own copy.

Comments: First, to establish my credentials, I was diagnosed with celiac sprue four years ago at the age of 46, after over 6 years of being told by doctors that I had "irritable bowel disease" and/or that nothing was wrong with me an antidepressant couldn't fix. (Never let any physician tell you that just because you are an adult and are apparently "well-nourished" that it is impossible for you to have celiac - make them give you the blood test!) So I am well acquainted with coping (or trying to) with a strict GF diet. I have to admit that I have not yet tested any of the recipes in Ms. Reilly's "Gluten-Free Baking" because, being an adult celiac, I hoped the book would have more savory recipes, not cakes, cookies, etc. Still, especially for those who are trying to make gluten-challenged children happy, "Gluten-Free Baking" is a wonderful resource. GF cooking, especially baking without gluten, is a HUGE challenge and Ms. Reilly certainly has the cooking credentials to tackle it, spurred on by finding out that her son had celiac disease. Gluten is the foundation for crusty, light, fine-textured bread, it is what makes dough flexible, able to capture gases during baking and give great volume to the baked item. Without gluten, what you frequently have is a dense, gummy, heavy, dry, crumbly, unappealing, very poor substitute. GF baking is much more successful in recipes where a dense texture is aimed for, e.g. biscotti (dry), corn pudding and pudding cake recipes (moist), fruit quick breads, fruit muffin recipes. In these types of recipes, GF "flour" mixture can be substituted for regular wheat flour fairly successfully. This being the case, it makes sense that GF cookbooks tend to focus on breakfast pastries and desserts. Even so, GF baking is much more complex than regular baking because there are so many more ingredients needed to try to achieve the gluten-effect without gluten. "Gluten Free Baking" has many, many recipes for unusual GF treats such as black forest cake, Boston cream pie, cream puffs, cherry strudel, filo pastries, chocolate praline torte, to name a few. If I ever need to make a GF dessert or batch of cookies, I will certainly turn to Ms. Reilly. For celiac/gluten-sensitive-copers who are looking for savory dishes, I have found "One Potato, Two Potato" to be the most helpful and inspiring cookbook I have found yet. More and more people are being diagnosed with gluten-intolerance in some form or another, and it is heartwarming to know there are trained cooks out there trying to make a GF diet more bearable.

Comments: Carol Fenster has given all of us that must eat wheat and gluten free such a gift! The time that it must have taken her to perfect such wonderful recipes is truly something not many have the time or talent to do. She has covered just about everything to make eating wheat and gluten free most delicious, indeed! Besides the delicious recipes she has included menus for Quick and Easy Dinners, Reduced Fat, Low Calorie Meals, Fish and Seafood Menus, Poultry Menus, Southwestern Menus and Meatless Meals. And there are more treasures in the back of this great cookbook that are so helpful such as Wheat Flour Equivalents, Substitutes, HIdden Sources of Wheat, Mail-Order Sources etc. If you need to eat wheat or gluten free this cookbook just must be a part of your life! I wouldn't know what to do without it! It surely is a "must buy" cookbook!

Summary: Great recipes, not so great ingredients
Comments: I use recipes from this book on a weekly basis for my gluten-free son. It's definitely a worthwhile purchase for the yeast-bread recipes. My son refused to eat sandwiches made on gluten-free bread until I started using Hagman's bread recipes. I like her recipes with garfava flour the best - no gritty rice-flour texture. On the down side, the ingredients are hard to find, as other reviewers have stated. I have to mail-order the flours, and I have not tried many of the recipes because they call for ingredients I just do not keep on hand and would probably not use in other recipes, like NutQuik or almond meal. As for her non-yeast bread recipes, I have had just as much luck adapting wheat recipes myself, and a lot of these recipes are based on mixes that she provides the recipe for. I have not tried these recipes, either, because I am not willing to put my expensive flours into a large quantity of a mix that I'm not positive will turn out well. Overall, this is a very useful book, and considering the limited availability of sources for gluten-free recipes, it's a must-have.

Comments: I was diagnosed as gluten intolerant about the time that Bette's first book was published. She guided me through the stages of grief ( how can I exist without wheat breads?) to a state of amazing health. I have eagerly bought and used each of her new books, but since she doesn't repeat herself, I still use many of the recipes from her original book. You need all three!

Summary: Quickly became a fan of Roben Ryberg's style of cooking
Comments: Although I'm grateful for all those out there that have published a GF cookbook for those of us with gluten intolerance, I find this book offers several benefits over the others. I didn't realize how grainy my rice flour recipes tasted until I tried Roben's Pumpkin Bread, Egg Bread, and Hot Crossed Bun recipes. And even though the consistency was different than I was used to with gluten cooking, the recipes I tried turn out perfectly the first time. It's important to follow the recipes exactly and trust the measurements given. A GF friend of mine also loves the Buttermilk Bread and I plan on trying that next. My gluten-eating friends enjoyed the Pumpkin Bread as much as I did too. Another benefit is that the ingredients are much easier to find and less intimidating so other people that don't usually cook gluten-free are asking for the recipes so they can make something for me too. Comments: I highly recommend this book. It's well written and very engaging. It's chocked full of valuable information for anyone who is diagnosed with celiac disease, suspicious that they may have gluten sensitivity or anyone caring for a loved one with gluten sensitivity. When I was first diagnosed with gluten sensitivity, I searched my local library for solid information to help me improve my health. To my utter disappointment, all I could find at my local library was a couple gluten free cookbooks. I needed information on how to get well, not brownie recipes. Thanks and congratulation to Dr. Braly and Ron Hoggan for publishing this excellent resource in one convenient volume. I plan to buy multiple copies to give as Christmas gifts to my relatives.

Summary: The Celiac's Bible
Comments: Along with the words, you have Celiac-Sprue Disease, your GI doctor should hand you this book and tell you to go home and read it. A diagnosis of Celiac seems overwhelming and the diet restrictive. The author uses humor and common sense along with personal experience to ease the pain and educate the consumer reading the book. Although a Gluten-Free diet is unlike any other, you can get a good, basic feel for it using this book. It helps to get one over the hump and on the road to wellness. I highly recommend this book. If you have Celiac Disease do yourself a favor and get it, if you have a friend or loved one with the disease show them that you care.

Summary: Helpful for wheat allergies
Comments: Good information on how different grains behave when substituting for wheat. Disappointing for Italian recipes. I am allergic to cow's milk, but tolerate buffalo milk mozzarella, which is what it is made of in Italy (Mozzarella di Bufula). The book makes no mention of this important substitution. Also, Pecorino Romano, like imported Feta, is made from sheeps milk, not cow's milk, as stated in the book. Sheeps milk yogurt was not mentioned either. Unfortunate since many people are turned off by the strong taste of goat milk products. Also, some people will tolerate foods that are cooked as some proteins are denatured or broken down by cooking. The book makes no mention of that. Also, some people might not tolerate tomatoes, but can tolerate a mock tomato sauce by pureeing red roasted peppers with or without artichokes as a sauce base. Most of the tomato sauce recipes contained tomatoes. Still the book is very thorough on grain substitutions.

Comments: My mother is allergic to wheat and so am I, so this book is a godsend to us, as it means we can now eat sandwiches. However I live in Ireland so I found it difficult to get used to "cups" rather than pounds and ounces, but once I learnt one cup is 8 fluid ounces, I discovered it is actually an easier and more accurate measurement of ingredients than using weighing scales. I actually want to advise anybody from Ireland reading this - guar and Xanthan gum (essential for gluten-free bread recipes) is very difficult to purchase in Ireland and I had to purchase from Oregon, USA. The postage cost more than the products, and delivery took 10 weeks...

Comments: I have a 4-year-old with celiac disease, so I was excited about this book. Unfortunately, when it arrived I discovered that the recipes didn't offer me as many new and different things to try as I had hoped. (I already own 4 other gluten-free cookbooks.) I tried the Breakfast Muffin recipe. It was okay. Nothing special. If you don't own any gluten-free cookbooks already, this one may be good for you. Two things really bothered me. First the bread machine recipes never stated the size loaf you were making. I assume 2lb, but that's important info to leave out. Second, I felt that some recipes were included just to fill pages. One page is a recipe for a baked potato. The resources in the back are quite helpful, but you could easily find them other places.

Summary: Happy Days are here again...
Comments: Thank you, Thank you Bette Hagman for taking your disease and making such a wonderful contribution to the rest of the world. I have a husband and now a nephew that both need the gluten free programs, except when I first started with my husband most doctors did not have a clue what we were dealing with. I even went to a dietician at the hospital and she walked away with 3 pages of information, and I had nothing, I just paid the office fee. I made up a lot of things on my own but until I found Bette; I could never seem to find a way to put bread back into his diet. Now he eats everything just like the rest of the world. We are so fortunate that now this disease is more well known and how it is affecting at least 1 out of 250 people, makes Bette Hagman more important than ever. I have all of her books and they go with me everywhere. What a blessing, it has made life so much more for those that are suffering.

Summary: For all gluten-free cooks -- especially kids!
Comments: Those of us following a gluten-free diet often feel something akin to claustrophobia when it comes to food. Every day we're faced with so many goodies that we can't have. It's a great comfort to have a resource like this one at home when you walk past the bakery section of your local grocery store. Just knowing you *can* go home and bake something sweet and tasty
opens up your world a little.
And these recipes do work; some are complex, many are very simple, which means the book answers a range of cook's skills.
While it is true that the recipes are based on mixes made from a wide range of sometimes exotic flours -- usually available through an American health food store -- it's not fair to condemn any of Bette's books for this. You're just not likely to find most gluten-free flours for cheap in your grocery store, at least not this early in the millennium.
My 11-year-old daughter has adopted this book as her kitchen companion. She turned out a wonderful cake on her first try. For those of you with children stuck with a gluten-free diet for life, there is no more essential skill to pass on to them than cooking -- and no better passion than a love of cooking -- that will support them through a lifetime on a specialized diet. This book makes a great starting place for cooking with kids, as well as being a suitable cookbook for adults of all skill levels.
